Cantaloupe and Green Chickpea Smoothie

After enjoying spring-like weather this weekend, it was definitely time to bring some fresh fruit goodness back into our smoothie regimen! Green chickpeas make an awesome pairing with naturally sweet foods — and provide an added kick of veggie-based protein!

Cantaloupe and Green Chickpea Smoothie

INGREDIENTS:

1 cup cubed, fresh cantaloupe (about 1/8 of a melon)

1/3 cup plain, probiotic yogurt

1-2 tsp real maple syrup, to taste

1 cup plain, unsweetened almond milk (may need a splash more to keep the blender moving)

1/2 cup frozen green chickpeas

1/2 sliced, frozen banana

1 tbsp ground flaxseed

4 tbsp hemp protein powder

 

 

INSTRUCTIONS: Toss cantaloupe, yogurt, maple syrup, and almond milk into blender and blend until smooth. Next, add chickpeas, banana, flaxseed, and hemp. Blend until smooth, adding a splash extra of almond milk if needed. Serve in a tall glass or take your smoothie “to go” in a Mason jar. Omit the yogurt to make this smoothie both dairy-free and vegan-friendly. Makes one large breakfast portion.

 

Kitchen Notes
  • Just a hint of smokiness from the maple syrup really adds to this fruit and veg smoothie. Green chickpeas taste nothing like their brown counterparts, so if you’re not normally a fan, these may change your mind!
  • Smoothies are the ultimate in “I’m not quite awake” cooking! Prep and portion everything beforehand for added ease.
  • It’s worth investing in a powerful blender. We have a Breville, but anything like a Vitamix or Blendtech would definitely do the trick!
