Confetti

Fresh fruit is starting to become more plentiful and reasonably priced: a sure sign summer is right around the corner! Want a quick hit of something sweet, colourful, crunchy, and clean? Try making this simple, five ingredient dessert inspired by an old, well-loved picnic recipe!

ConfettiINGREDIENTS:

4 sliced, fresh, large, hulled strawberries*

Fresh pineapple chunks

1 tbsp raw, unsweetened, shredded coconut

1 tbsp real maple syrup

2 tbsp raw, sliced almonds

*Optional: Get a bit fancy-pants and cut shapes from the pink “meat” of two 1/2″ thick watermelon slices (instead of using strawberries) with small cookie cutters.

INSTRUCTIONS: Toss sliced berries (or melon pieces) with pineapple chunks in a small dessert bowl. Sprinkle with almonds and coconut. Drizzle with maple syrup and serve. Makes one portion.

 

Kitchen Notes
  • Made this for Sam the other night. He gobbled it up and asked what it was called. I said “Confetti,” as it kinda’ reminds me of that old picnic dessert by the same name — minus the whipped topping, chocolate chips, processed sugar, and mini marshmallows. Okay, okay! But they both still have shredded coconut!
  • If you want to break-out some funky gadgets, you’ll need a pineapple corer and a fruit punch (or cookie cutter). If you’ve never heard of those items? No worries — just use a larger kitchen knife and stick to slices and chunks!
